Downeast Maine Pumpkin Bread

This recipe is fabulous, but I only gave it 4 stars because I made some changes to make it healthier. I substituted applesauce for the oil and used white whole wheat flour and brown sugar; I made these into muffins (bake about 20 minutes) to offset the density caused by using the applesauce (as a loaf it sometimes doesn't cook all the way through). I also left out the water and just cut back on the flour. Also, if you are having trouble with over-stirring the batter, mix the dry ingredients and then stir them in by hand with a whisk until just blended.

Baked Salmon Fillets Dijon

This recipe is already a favorite; we've made it multiple times. It is best to melt the butter and then mix the bread crumbs into it, making a sort of crumbly paste to spoon on top of the dijon mustard. After it is done baking, quickly broil it for a minute or 2 to get the top extra crunchy. Yum! And oh yes, don't forget to spray the aluminum foil with a nonstick spray. I forgot that the first time and our fillets were served on little squares of foil!

Cheese Ball I

So easy and so good! I added some white cheddar and onion powder as others suggested and added double the dried chives and garlic powder. I also used reduced fat cream cheese and replaced the mayo with nonfat plain yogurt to try cut calories.

Banana Crumb Muffins

These are the best! I made several batches with different fruit - banana, cherry, and blueberry. The crumb topping makes the muffin.

Roast Chicken with Rosemary

This is an easy meal to make that my family loves! I usually make mashed red potatoes and add the a few of the cooked garlic cloves to them after I pull the chicken from the oven. Thanks for a great Sunday dinner!

Skillet Enchiladas

Monster Cookies

I LOVE these cookies! I'm a big fan of crispy, crunchy cookies, and these fit perfectly! I love the hint of coconut flavor and the crispiness rice cereal adds. I have to admit, however, I didn't follow the recipe exactly. First of all, I cut the recipe in half. Then, I only had 1/2 cup butter on hand, so I used 1/2 cup butter + 1/2 cup shortening. I also cut both the white and brown sugars to 3/4 cup each. After attempting to cream the butter and sugar, there was still way too much sugar relative to the amount of butter, so I added 1/4 cup cream cheese (was out of butter and shortening). Last change was increasing chocolate chips to almost 2 cups. Great recipe! Thanks for sharing!!

Veggie Squares

These were fantastic! I did the original recipe first, and we liked it quite a bit. The second time I made it, I turned it into a BLT appetizer by using butter garlic flavored crescent rolls, using the same cream cheese mixture, then sprinkling the top with shredded lettuce, chopped tomatoes and crumbled bacon-- it was a HUGE hit! Thanks for the wonderful recipe!

Banana Pancakes I

Coconut Curry Tofu

This recipe is awesome!!! Tastes great, very colorful, and easy to make! If you're slow with a knife, like I am, it definitely takes longer than 25 minutes to prep, but it's worth it! As with any recipe, adjust ingredients to your taste buds. I like basil a lot, so I used about 1/2 cup coarsely chopped basil. Also, remember that all curry is not created equal. You may have to adjust spices based on the potency and flavor of your curry. That being said, I added a little more brown sugar than called for after tasting the sauce before adding any other ingredients. I also used baby bok choy and a Hunan Red Chili Sauce instead of a paste because that's what I had on hand. The one complaint I have about this dish is that the coconut flavor is a little weak. I will probably add a little fresh grated coconut next time.
