In Albuquerque, red and green chile sauce reign supreme, topping everything from enchiladas and burritos to huevos rancheros and even burgers. A sauce's bite is not determined by the color of the chile, as often believed, but by the particular variety of the fruit, and when it was grown. When ordering food in Albuquerque, it’s wise to ask the waiter which color sauce is hotter that day to suit your tastes. Or, just order your dish "Christmas-style," so it comes with both. Said to have originated in Albuquerque, sopaipillas are often served alongside spicy meals. When these fried doughy treats are dipped in honey, they help soothe a burning tongue.

Big Soft Ginger Cookies

These cookies are absolutely delicious! I made them for my dad and he said "You outdid yourself!" which, if you know him, is high praise indeed! The only sub I made was real unsalted butter for the marg, OJ for the water, 1/2 tsp LESS of the ginger and 1/2 tsp MORE of the cinnamon. Thanks for a great recipe!

Hot Fudge Sauce II

This was the best homemade hot fudge I have ever made! I used half cream and half evap milk but that was my only sub. Thanks for a great recipe!

Pork Chops a la Slow Cooker

I prepared this yesterday and it turned out very well. I forgot to buy dry mustard so I used honey mustard to coat the chops before dredging them in the the flour (which I seasoned with garlic and onion powder). The chops came out tender and the sauce was great. I actually poured it into a sauce pan and added a little cornstarch (1 tbsp mixed with 1/4 cup water) and reduced it a bit more before serving. We used it as gravy on our mashed potatoes. I will be preparing again soon.
