Great flavor and texture!! I peeled and cut 2 zucchinis into chunks and added them shortly after adding the onion. I also discovered i had no lemons or lemon juice but did have limes so i substituted lime juice. I didn't use near as much jalapeno-had a drying one and cut it up and added only some. It had quite a bite, but my 9yo ate it with lots of rice and enjoyed it. made my own garlic and ginger paste using an allrecipes recipe. I will make this again and hopefully get quicker at prep.

Rated 4 stars because it's good, but way better with hashbrowns or tater tots, or no potatoes at all. I used Jimmy Dean sausage, and lots of cheese inside the burrito, not on top! For one pan recipe without potatoes, cook sausage, add eggs, scramble til done, add to tortillas add cheese and tator tots if desired, roll up and enjoy. Also can be wrapped up in saran wrap and frozen.

Outrageous Chocolate Chip Cookies

I made these for my toddler who liked them very much - used Kind Arthur white whole wheat flour for a bit more nutrition. Cut the sugar and the chocolate chips a bit too but still tasty.
