Depression Cake I

Oh so tasty just as the recipe is. If you like a spice cake, this one is great. I was worried because I tasted the concoction after it cooled and I didn't think it taste good at all. I think this cake would be great even with out the raisins although the may have added some flavor during the simmering.

Sugar Cookie Icing

This recipe worked out for me - but it took a while. As written, there is not nearly enough liquid. I just kept adding milk and corn syrup until I had the consistency I was looking for. Dried nice and shiny - and tasted fine - but as it happens, I'm not very good at decorating. Thanks!

this was yummy. i used zucchini and yellow squash since i had both...i also used monterey jack since that's all i had at home. simple to make and turned out great...a definite keeper :)

Omelet in a Bag

Had to try it. The idea seemed a little creepy to me - and I disagree with reviewers that think these are pretty - but they ARE good AND easy. I used a gallon bag and my omelet broke in the center from the bag bending as it boiled, but otherwise worked like a charm. My boys had me make their omelets the usual way - but I bet younger kids would be totally impressed. Thanks for the recipe!

Zesty Slow Cooker Chicken Barbecue

I LOVED THIS! It was so easy, I think we'll be eating this often. I cooked the chicken in chicken broth with sliced onions for about 4 hours, drained it, shredded it and added the sauce and dressing and let it cook for 2 more hours. Thanks for such an easy, delicious recipe!

Easy Red Beans and Rice

I liked this. It might not be "authentic" (I have no idea), but it sure was tasty! I only used one can of beans, 1/2 an onion and I used chicken sausage, because that is what I had. I added some extra garlic, too. I combined it with the rice before serving - it was a really filling, satisfying meal. Served it with Jalapeno Corn Bread.

Peach Beehives with Hard Sauce

Wow. These are harder than they look - Pomplemousse makes it look easy. Very cute idea - and tasty too! I used biggish peaches, so only got 2 per crust (ate a whole one, too!). I followed Pomp's egg wash and bee suggestions. I had a hard time getting my dough to stick to itself and ended up brushing some water on. Also, be careful not to wrap your peaches too tight - they expand while baking and may crack your hive. Thanks to Linda for the recipe and Pomplemousse for the beze (yours are way cuter and resentment is the secret ingredient ... xo). :)

Grilled Tropical Tuna Steaks

Great! I used apricot-pineapple preserves bc that's what I had. The marinade is awesome - I used about 2/3 of it to marinate and saved 1/3 to glaze the fish after cooking. Also added a little chili oil, since we like heat - but the flavor is perfect as is. Thanks!

Coconut Rice

The main problem with this recipe is that the liquid-to-rice measurements are off. I'm amazed that it got so many good reviews considering that there is either half as much liquid or twice as much rice as needed for it to turn out. I adjusted my liquids and followed the rest of the recipe. The flavors are good - I like the curry and ginger, but also thought it could use a little sweetness and/or more coconut flavor. Thanks!
