Corned Beef Hash (Abalos style)

"Corned beef, potatoes, tomatoes, onions, and tons of garlic make this Filipino family recipe an excellent quick and easy dish to serve over rice."

INGREDIENTS (Nutrition)

  • 1 tablespoon vegetable oil
  • 4 cloves garlic, chopped
  • 1 onion, diced
  • 1 tomato, chopped
  • 1 large potato, diced
  • 1 (12 ounce) can corned beef
  • salt and pepper to taste

DIRECTIONS

  1. Heat oil in a large skillet over medium-high heat. Add onion and garlic, and cook until fragrant. Stir in the tomatoes and potatoes, and cook for 7 to 10 minutes until potatoes are softened. Add the corned beef, and flake into pieces. Cook for another 10 minutes, stirring frequently. Season with salt and pepper, and serve.
